Introduction:

Duck tongue is rich in nutritional value which contains more B vitamins and vitamin E than other meats. The protein is about 16% to 25%, which is much higher than that of livestock meat. The fat in duck tongue is moderate, about 7.5% lower than that of pork.  Spicy duck tongue is a Chinese favorite snack. It’s easy to make at home.

Instruction:

Stir-fry

1.First rub and wash the duck tongue with salt and flour, then put them in a pot of cold water, scum the bubble when the duck tongue is boiling, rinse and drain.

2.Add scallions, ginger slices, garlic, dried red peppers to the oil pan and stir- fry until fragrant , then remove and discard. Keep the oil for later use.

3.Push the duck tongue into the oil pan and stir-fry, add light soy sauce, dark soy sauce, rock candy, cooking wine, water, bring to a boil, then turn to medium-low heat and simmer.

4.Finally, boil until thick and pour some sesame oil and serve.

Hot-pot

1.Fill the hot pot pot with broth or stock and bring it to a boil.

2.Place duck tongues in the broth to cook. The broth should be kept at a rolling boil, and it should be cooked for a short period of time until floating.

3.Use a slotted spoon or chopsticks to remove the cooked ingredients from the broth and dip them in a sauce before eating.
